Shakshuka
Today’s version:
Step 1:
1 tsp olive oil
1 chopped onion
2 diced red peppers
Action: Saute in a pan. (Heat up on medium high heat until onions are translucent)
Step 2:
2 minced (finely chopped) garlic cloves
2 tsp paprika
1 tsp cumin
¼ tsp chili flakes (optional)
½ tsp salt
Action: Add and stir
Step 3:
Option 1: 4 chopped tomatoes + tomato sauce/passata
Option 2: 1 large can of diced tomatoes
Action: Add, stir and let simmer (bubble up and liquid evaporate 2 min.)
Step 4:
4 to 6 eggs
Parsley
Action: Make 4 wells (craters) in the pan and crack in the eggs. Cover for 5-7 minutes and then garnish with parsley.
Step 5: Eat and enjoy a balanced breakfast!
