Banana Bread

4 ripe bananas (mashed) + 1 for decoration

2 eggs, at room temperature

1/3 cup half honey half maple syrup (but you can use all of one)

1/2 cup lactose free yogurt (personal struggle)

1 teaspoon vanilla extract

1/3 cup (approx. 40 grams) unsalted butter - browned (you melt it on the stove and let it cook until brown. Let it cool!)

1 3/4 cup spelt flour

1 teaspoon baking soda

½ teaspoon cinnamon

¼ teaspoon salt

Actions:

1.     Preheat the oven to 180C/350F.

2.     Mix the wet ingredients first and then add the dry.

3.     Place in a greased tin (round, loaf, whatever).

4.     Bake for 35 minutes. Check how it is. If it is still jiggly add 10-15 minutes more. It is cooked once you insert a toothpick or a knife and it comes out with only a few crumbs. This will depend on the size and shape of the tin you are using.

5.     Let cool at least 3 minutes, if you can. I burnt my mouth…
